Ingredients
1 cup of almond meal
1 cup flaked almonds
1 cup desiccated coconut
1 teaspoon chia seeds
1/4 cup Rice Malt Syrup
1/4 cup butter
1/2 teaspoon bi carb soda
1 tablespoon water
Method
Combine almond meal, flaked almonds, coconut and chia.
Combine RMS and butter into a small pot over the stove and heat gently.
Mix the bi carb and water together and then pour into the RMS mixture on the stove until it starts to froth. Take off the heat.
Pour hot mixture into the dry ingredients and mix.
Bake in a low preheated oven 120 C for about 30 minutes until golden
Note: Take bickies out of the oven when they have browned a little. Cook too long and they will be bitter.
These are crunchy on the outside and soft in the middle and best enjoyed the day they are baked.
